"Raising of the wrist" describes the action when you bring the beer from the surface its resting on in the glass, and then tip it into your mouth, thereby 'raising your wrist'. Trust an Australian to know that...

"out-consume" means "drink more than" i.e. can consume more alcohol
"pissant" just means "pissed" in this context - a.k.a drunk, trashed, sloshed, smashed, hammered...can't think of any more!
I'm not sure what "raising of the wrist" means...
