Oh, and you don't need a fancy pan. Anything that's not going to catch fire works.

1) The pan's purpose is to control the ash (easy cleanup) and keep things from catching on fire. On a grill, it's not such a problem. 2) To light the charcoal, I use a charcoal chimney. $19 for a big fancy one that you can also cook on with a cast iron pan w/o the legs. 3) Get a lid lifter with the three legs and a hook operated by squeezing the handle. Zero ash in food. Best wishes with your dutch oven!

I lay potatoes (and other veggies) on the bottom of the dutch oven and cook the meat on top.
